Italian Pineapple Cake Recipe

1. Prepare the pan and fill
Preheat your oven to 170-175 degrees Celsius.
Take a removable round cake tin with a diameter of 22 cm. Line the bottom of the tin with baking paper and grease it with butter.
Arrange the pineapple slices on the bottom of the pan, making sure they cover the surface evenly. Place a cherry in the center of each pineapple slice.
If you are using fresh cherries, cut them in half and remove the pits before placing them in the pineapple slices.
2. Mix the dough
Separate the egg whites from the yolks and divide them into two separate bowls.
Put a pinch of salt in a bowl with the egg whites and beat until stiff peaks form.
Gradually add 70 g of sugar, stirring constantly, until the mixture is shiny and forms stiff peaks.
In another bowl, beat the egg yolks with the remaining sugar (130 g) until light and creamy. Add vanillin or vanilla sugar for more flavor.
Melt the butter and mix it with the milk. Add this mixture to the beaten egg yolk and mix well.
Mix together the flour and baking powder and add to the egg yolk mixture. Mix until smooth and well incorporated.
3. Mix the dough
Using a spatula, carefully fold the beaten egg whites into the egg yolk mixture. Stir gently from bottom to top until the dough is smooth and even.
4. Bake the cake
Pour the prepared dough in the shape of a cake over the layer of pineapple and cherries.
Place the cake pan in the preheated oven and bake for 45 minutes, or until the tart is golden brown and a toothpick inserted into the center comes out clean.
5. Preparation for impregnation
While the cake is baking, prepare the impregnation by dissolving the pineapple jelly in the pineapple syrup over low heat until completely dissolved.
6. Touch the final
Once the tart is ready, take it out of the oven and let it cool slightly.
Carefully turn the tart over, making sure the pineapple layer is on top.
Using a teaspoon, carefully pour the prepared pineapple jelly impregnation onto the still warm tart. The jelly is absorbed immediately and gives the cake moisture and flavor.
7. Serve
Serve the Italian pineapple cake warm to allow the flavors to blend for an unforgettable culinary experience.
Garnish with more cherries or whipped cream if desired.
