How to prepare an exquisite homemade chicken sandwich

Procedure

  1. In a frying pan over medium heat, melt the butter, sauté the onion with the garlic and add the poblano slices, the corn, the chicken breast and cook for 5 minutes, season with salt and pepper. Remove and let cool.
  2. In another pan over medium heat, toast the chiles on all sides. Then, place them in a bag and let them sweat for at least 20 minutes. After this time, take them out of the bag and, using a knife, peel the chiles and remove the seeds and veins.
  3. Combine the chiles with the whipping cream in the blender, season with salt and pepper. Then, refrigerate the mixture for 30 minutes. Beat the cream cheese and then add the poblano chile cream, continue beating until completely integrated. Adjust seasoning as necessary.
  4. On a plate, place 3 slices of bread, cover with a little poblano chile cream, add a little of the chicken filling and cover with more bread. Repeat this process until you obtain 3 layers.
  5. Cover the sandwich with the rest of the poblano chile cream. Garnish with sour cream, baby corn and cilantro. Refrigerate until serving time.
