How to prepare peppers in oil

Remember to always wear disposable food gloves to avoid direct contact with your hands, which could cause burning eyes or other sensitive parts of the body.
Once you have opened the jar and are using the peppers, add more oil to cover the rest: they must not remain in contact with the air.
Alternatively, you can prepare chillies in oil without vinegar . Wash 400 g of chillies and cut them into small pieces. Put 250 ml of extra virgin olive oil in a saucepan and heat for 1 minute. Add the chillies and continue cooking for about 15 minutes. Then add 3 teaspoons of salt, finish cooking and transfer the chillies to sterilised jars: add more oil until everything is covered. Seal the jars and cook them in a saucepan of water for a quarter of an hour. Finally, let them cool by turning them over on a cotton cloth. You can keep your chillies in oil for several weeks in a cool, dry place away from heat sources.

Hot chilies in oil can be stored unopened for 6 months in a cool, dry place away from heat sources. Once opened, they should be kept in the refrigerator for a maximum of 1 month.
