Himbeer-Bananen-Chia-Parfaits

Directions:

In a bowl, combine chia seeds, coconut milk, honey and vanilla extract. Stir until well combined, let sit for 15 minutes, then stir again to prevent clumping.

Puree one banana and half of the raspberries in a blender until smooth. Slice the remaining banana for layering.

Layer chia mixture, banana slices, raspberry puree and whole raspberries in serving glasses.
Repeat layers until glasses are full. Top with banana slices, fresh raspberries and mint leaves.

Refrigerate for at least 3 hours before serving to allow the layers to set.
