Ingredients
For the dough:
1 1/2 cups all-purpose flour
1/2 cup unsalted butter, chilled and cubed
1/4 cup granulated sugar
1/4 teaspoon salt
4-5 tablespoons ice water
For the chocolate filling:
1 cup granulated sugar
1/4 cup cornstarch
1/4 teaspoon salt
2 cups whole milk
4 large egg yolks
4 ounces semisweet chocolate, chopped
2 tablespoons unsalted butter
1 teaspoon vanilla extract
For the meringue topping:
4 large egg whites
1/4 teaspoon cream of tartar
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
Instructions
Prepare the dough:
In a large bowl, combine flour, sugar, and salt.
Stir in butter until mixture resembles coarse crumbs.
Gradually add ice water, 1 tablespoon at a time, until dough comes together.
Form dough into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.
