Healthy Apple and Speculoos Cheesecake

Preparation of the base:
Preheat your oven to 180°C.
Reduce the speculoos to powder by mixing them or crushing them in a bag.
Mix this powder with the applesauce.
Cover the bottom of a mold (15cm diameter) with baking paper and press down the resulting dough.
Bake for 10 to 15 minutes.

Preparing the device:
While the base is cooking, beat the Philadelphia with the egg, plain skyr, 35g of maple syrup and 25g of cornflour until you have a smooth, lump-free mixture.
Once the base is cooked, let it cool for about twenty minutes then pour the mixture on top.
Lower the oven temperature to 150°C and bake the cheesecake for 1 hour.

Preparation of caramelized apples:
Once removed from the oven, let the cheesecake sit at room temperature.
Cut the apple into small cubes and place them in a bowl.
Add the water, cinnamon powder, 5g of maple syrup and 5g of cornstarch.
Mix and microwave for 2 to 3 minutes.

Finishes and service:
Cover the top of the cheesecake with the cinnamon apple cubes.
Refrigerate the cheesecake at least 2 hours before serving.
This healthy apple and speculoos cheesecake is a light and tasty dessert, perfect for ending a meal on a sweet and comforting note.
