Healthy and Delicious Date and Mango Energy Balls

Add the pitted dates and dried mango to a food processor and pulse for 10 seconds to break it down. Scrape down the sides of the bowl, add the remaining ingredients, and pulse again until the mixture is fairly smooth, with a slight texture. It will probably start to roll in the food processor when the mixture is smooth enough.

Use a medium cookie scoop to form balls and roll them between your hands. Then place them on a plate. Repeat this process until all the dough is used.

Advice :
To store: Place in an airtight container in the refrigerator or on the counter for up to 2 weeks. For a softer texture, leave at room temperature. For a firmer texture, place in the refrigerator.

To freeze: Place them in the freezer, using parchment paper between each ball to prevent them from sticking. If they are soft and sticky when you roll them, you can roll them in additional shredded coconut or finely chopped nuts. You can also place them in the refrigerator to harden and become less sticky.
