A delicious Swiss roll can really be adapted to any season and any taste! That’s what I did with my winter gingerbread Swiss roll. Gingerbread spice, mandarins, orange and cinnamon give it the perfect Christmassy touch.
INGREDIENTS
For the dough:
4 eggs
120g sugar
1 pack vanilla sugar
1 pinch of salt
85g flour
2 tsp gingerbread spice
2 tbsp cocoa powder
For the cream:
250g mascarpone
250g quark, 20% fat
200ml whipped cream
1 pack of cream stiffener
1 orange
75g sugar
2 tsp cinnamon
175g pickled mandarins
aside from that:
1 tbsp cocoa powder
50g dark chocolate
