Gingerbread cake

Preparation:

1.

Separate the eggs. Beat the butter and vanilla sugar until foamy and add the egg yolks one by one, continuing to beat. Add honey and continue to beat until a smooth mixture is obtained. Melt the chocolate over low heat, then add it to the previous mixture, continuing to whisk.

Mix flour, shortening, cocoa and spices and sift. Add ground biscuits. Add the floury ingredients to the previous mass.

Beat the egg whites with a pinch of salt until stiff, and slowly add them to the previous mass while mixing with a whisk.

4.

Pour the dough into a 20×30 baking tray and bake in a preheated oven at 180*C for about 20 minutes ( be sure to check with a toothpick!)

5.

When baked, cool the dough completely and cut it in half with a sharp knife. Spread in between with jam or marmalade to which you have added a pinch of cinnamon, cover with another crust and leave to cool.
