A delicious recipe for Ghoriba or Ghriba almond and orange cakes, so fragrant and melting as you wish. Traditional Moroccan cracked cakes that I revisited by taking inspiration from the Italian cake (Paste di mandorla all’arancia).
INGREDIENTS
Dough
290 g of almond powder
1 tablespoon cornstarch
120 g sugar
2 small eggs
1/4 teaspoon baking powder
1/4 teaspoon of fleur de sel or fine salt
The zest of an organic or untreated orange
1 tablespoon apricot or orange jam optional
1 tablespoon orange blossom water or orange juice
30 g candied orange peel
Orange or apricot jam for garnish
The coating
1 bowl of icing sugar, approximately 80 g
1 teaspoon cornstarch
A little orange blossom water
INSTRUCTIONS
In a large bowl, combine the almond powder, cornstarch, sugar, baking powder, orange zest, candied orange peel and fleur de sel. Mix.
Make a well and add the jam, the beaten eggs and the orange blossom water.
