Fiesta cake: the recipe for the delicious dessert with orange cream and chocolate

How to prepare the Fiesta cake
Whisk the eggs with the sugar1, add the baking powder and the grated orange peel and mix2, add the sifted flour and the corn starch3 and mix until smooth.
Pour the mixture into the springform pan with a diameter of 22 to 24 centimeters4 and cook in the preheated oven at 180°C for 40 minutes. Prepare the cream: Mix the egg yolks with the sugar, salt and corn starch until smooth5. Cut the orange peel and juice into the milk. Stir while heating on the stove6.
Pour the orange milk into the mixture of egg yolks, starch and sugar, put it in the pan and filter it through a sieve.7. Cook the mixture on the heat until it becomes creamy. Cover the cream with cling film and leave to cool8. Cut the cake into 3 parts9.
Moisten the base with orange juice10 and spread the cream well and smooth it with a spatula11. Moisten the second layer with orange juice and cover. For the glaze, mix the chocolate with the butter and the hot, liquid cream12 to obtain a smooth glaze.
Place the cake on a wire rack and pour the icing over it13and let cool for an hour. Decorate the cake with the remaining icing and orange slices14. Your Fiesta cake is ready to serve15.
Advice
If you want to prepare the bath with rum , dissolve 2 tablespoons of sugar in a saucepan with 50 milliliters of water and the juice of 1 orange, then add the rum, which you can also replace with Cointreau or with Grand Marnier .
You can also bake the cake in the rectangular mold or portion everything into small rectangles and glaze them individually: ideal if you want to serve the Fiesta cake as a snack.
For the topping , pour the dark chocolate frosting over the cake and allow it to spread naturally so that it doesn’t form streaks. Place a sheet pan under the cake rack so you can catch and reuse any excess frosting.
