FAUX CAPRI CAKE WITH GREEK YOGURT: If you have strawberries, make a fantastic treat

Greek Yogurt Fake Capri Cake Recipe:
Start making the fake Capri cake crust by adding the flour, cocoa powder and baking powder to a bowl, then mix with a wire whisk and set aside. In another bowl, add eggs, salt, vanilla and sugar. Beat with a wire then add oil and milk.
Add the sifted cocoa mixture and mix. Spread the mixture for the fake Capri cake in a rectangular sheet with removable edges, lined with baking paper and bake at 170°C for about 20 minutes. Blend the thawed strawberries with a stick mixer and add sugar. Stir and let it boil over low heat, then turn off the stove.
Add water to the gelatin powder, mix and let it swell for a few minutes. When the strawberries and sugar have cooled a little, add the gelatin, mix, then add a little lemon juice. Let the strawberry filling cool to room temperature.
Take the cooled crust out of the tin and cut it lengthwise so that one half is much thicker than the other. Place the thicker half on a rimmed baking sheet. Add sugar to Greek yogurt at room temperature, then mix gelatin and water in another bowl and let it rise for a few minutes.
In the third bowl, mix the liquid cream and vanilla sugar and combine. Add the mixture together with the Greek yogurt and stir with a food processor. Heat the gelatin slightly and mix about 250-300 g with the Greek yogurt filling.
When the temperature equalizes, pour into the Greek yogurt filling and mix. In the thicker crust, add a few tablespoons of Greek yogurt with gelatin filling and a tablespoon of strawberry filling at room temperature. Repeat this process until you have used up all the ingredients, then use a toothpick to sprinkle the Greek yogurt over the mock capri filling. Cool the Capri cake in the refrigerator for 4 hours. Crumble the crust and top the mock capri with Greek yogurt.
