FAUX CAPRI CAKE WITH GREEK YOGURT: If you have strawberries, make a fantastic treat

The mock capri cake with greek yogurt and strawberries was very refreshing. Every bite melts in your mouth.

Capri cake is very popular in our area. The classic recipe includes a thin layer of chocolate, a white vanilla pudding filling, a layer of strawberries and a soft crust.

There are many versions of this irresistible treat, such as Baked Capri Cheesecake. Today we recommend a fake Capri cake with Greek yogurt. The recipe includes strawberries, but if you don’t have strawberries in the fridge, you can use other similar fruits, such as raspberries.

INGREDIENTS REQUIRED:

For the crust:
2 eggs
pinch of salt
8 g vanilla sugar
80 g sugar
50 ml milk

50 ml oil
110 g flour
20 g cocoa
5 g baking powder

For the strawberry filling:
470 g of frozen strawberries
50 g of sugar
10 g of powdered gelatin
5 tablespoons of boiled and cooled water
Juice of 1/2 lemon

For yogurt mousse:
25 g gelatin powder
120 ml boiled and cooled water
400 ml liquid cream
16 g vanillin sugar or vanilla extract
800 g Greek yogurt
200 g sugar
