Eggs & Veggies Bake

Directions:

 

Prepare the vegetables: Heat the olive oil in a large pan over medium heat. Add the sliced mushrooms, chopped red and green bell peppers, and cook until the vegetables are soft and slightly browned.

Cook the eggs: In a bowl, beat the eggs with salt, red chili powder, black pepper, thyme, and mint. Pour the egg mixture over the cooked vegetables in the pan. Sprinkle the chopped green onions on top. Cook until the eggs are set, stirring occasionally.

Make the sauce: In a separate bowl, whisk together 1 egg, milk, salt, and flour until smooth. Pour the sauce mixture into a small saucepan and cook over low heat, stirring constantly, until the sauce thickens.

Assemble and bake: Preheat your oven to 180°C (356°F). Transfer the cooked egg and vegetable mixture to a baking dish. Pour the thickened sauce over the top. Sprinkle the grated cheddar cheese evenly over the sauce. Bake for about 10-15 minutes, or until the cheese is melted and golden brown.

Serve: Remove the dish from the oven and let it cool for a few minutes. Cut into slices or squares and serve as a delicious and hearty breakfast.
