DONUTS FILLED WITH STRAWBERRIES

Add the egg, salt, sugar then knead at speed 1 for 3 minutes. Gradually add the soft butter then increase to speed 2 and knead until the dough comes away from the edges. The dough is sticky, this is completely normal.

Oil your hands and the bottom of a salad bowl. Form a ball, place in the salad bowl, cover and let the dough rise for 1 hour in a warm place.
The temperature should not exceed 30°C.

Punch down the dough then spread it out on a floured work surface. Fold it in 4 as in the photo below. In the photos you will also notice that I rotated the dough before folding it again.

Roll out the dough to 1 and a half cm thickness and cut it out using a 5 cm diameter cookie cutter.

Place the dough pieces on a baking sheet lined with a mat or parchment paper. Leave to rise for 45 minutes to 1 hour in a warm place.

Brush the dough pieces with milk and bake in an oven preheated to 180°c. Cook for between 8 and 13 minutes.

Custard

While it is growing, heat the milk. Meanwhile, whisk the sugar with the eggs and the liquid vanilla. Then add the cornstarch and mix until you obtain a smooth paste.
(For those who use half a vanilla pod: split it in two, scrape out the small seeds then pour the pod and seeds into the milk before heating it. Remove the pod before pouring the milk into the preparation.)

Pour the hot milk in two batches over the preparation and mix.

Transfer the mixture and cook over low heat until it thickens and the first bubble appears.

Remove from the heat, add the butter. Mix and pour everything into a salad bowl. Cover with film and leave to cool.

Pour all the ingredients into a very cold bowl and beat everything until it doubles in volume. It should look like shaving cream.

Cut the donuts in half and pipe the pastry cream using a piping bag fitted with a serrated nozzle.

Add the jam in the center and on the ends.

Arrange a few pieces of strawberries then pipe the whipped cream.

Close with the cap then sprinkle with icing sugar and enjoy.
