Method of preparation:

Mix the vanilla pudding powder into 150ml of milk. In a saucepan, add the rest of the milk and the egg yolks, the sugar and mix well. Boil the mixture and add the mixed pudding powder, cooking it until it thickens. Transfer the cream to a bowl and cover with cling film.
In a large saucepan, boil 130ml milk and water with salt, sugar and butter. Add the flour and mix quickly. After the dough has cooled, add the eggs gradually.
Line a baking tray with paper and spread the dough. Bake at 230°C for 10 minutes, then reduce the temperature to 200°C and bake for another 10 minutes.
Beat the soft butter with the seeds from the vanilla pod. Gradually add the cooled cream. Wash and cut the strawberries and mix them into the cream.
Cut the cooled cake in half and place one of the sides in a rectangular cake tin. Spread the cream on top and cover with the rest of the top. Leave the cake in the fridge for an hour.
Serve the cake garnished with powdered sugar, strawberries and fresh mint leaves.
