Dark chocolate pecan cake

  1. Step 1

    Heat your oven to 160 c then line a 6-8″ cake tin. In a medium size bowl mix egg yolks with the sugar, butter, chopped pecan, melted chocolate, flour and vanilla. Beat for 4 minutes.

  2. Step 2

    In the other bowl whisk egg wites with a tbsp of icing sugar then fold in gently with the chocolate mix.

  3. Step 3

    Turn it into your lined tin and bake for 35 minutes or until a pin or skewer comes out clean. While the cake is baking prepare the filling. Melt the chocolate and butter over simmering bowl of water, stir in syrup and milk then let it cool in the refrigerator. Cut the cake in half and spread cooled the filling over.

  4. Step 4

    For the glaze, melt the chocolate and butter over simmering water, remove from heat then stir in syrup and milk. Spread over your cake decorate with whole pecans and enjoy. (I also dusted the top with icing sugar but you don’t have to).
