Grandpa’s crumbled coppa is a simple and delicious no-cook dessert, ideal to bring to the table as a happy end to a meal or to eat as a special snack in the company of guests.
It is a cake inspired by the famous ice cream from grandfather’s cup, prepared with a layer of cocoa biscuits and melted butter and topped with a soft and luscious coffee cream.
To prepare it, simply pulverize the biscuits in a blender, then mix with the warm melted butter as you would for cheesecake and then spread 2/3 of the mixture obtained on the bottom of a 22 cm diameter springform pan; after a resting period in the fridge, pour the filling on the base obtained by mixing the mascarpone , icing sugar, mocha coffee and whipped cream in a bowl and finally cover the surface with the remaining crumbled biscuits.
The result is a spoonful of delight that can be left to harden in the fridge for at least a couple of hours or in the freezer for about half the time and finally sprinkled with a little icing sugar .
If you want, you can replace the espresso coffee with the soluble coffee to be dissolved in a cup of hot water or, if the cake is intended for the little ones, with the decaffeinated coffee: important, in order not to destroy the filling, is to be used very cold. If you want, you can enrich the cream with white or dark chocolate chips and then replace the classic cocoa biscuits with buckwheat biscuits : for a gluten-free preparation, also suitable for guests with celiac disease or gluten intolerance.
To save time, you can prepare the crumble bread the night before : if you let it rest in the fridge, its flavour will intensify and it will be even better.
