COUNTY FAIR-STYLE DELUXE CHEESEBURGER

To prepare the burgers, divide the ground beef, and form it into 8 equal sized patties, about ½-inch thick by 5 inches across. Do this by rolling the meat into a ball and flattening each one out. Freeze the patties until you’re ready to cook.
In a medium skillet, heat the vegetable oil over medium-high heat. Add the onions, and season with salt and pepper to taste. Sauté the onions until they become light brown and translucent, about 10-15 minutes.
When onions are done, cover the skillet and set aside.
In a large skillet, melt the butter over medium-high heat. Season one side of the burger patties with salt and pepper, and place them seasoned-side down in the skillet. Season the other side while the first side is cooking.
Grill the patties for about 2 minutes on each side, until browned and almost crispy on the edges.
Reduce the heat to medium-low, and top each patty with a slice of American cheese, followed by ¼ cup of grilled onions, another slice of American cheese, and another ¼ cup of onions. Repeat this process for all the patties until you’ve used all the cheese and onions.
Cover the skillet, and allow the cheese to melt and the onions to come back to temperature, about 2 minutes. Remove from the grill, and allow to cool for 5 minutes.
Take your toasted hamburger buns, and fill each with the cheeseburger patty. Serve with traditional toppings like lettuce and tomato, and condiments like ketchup, mustard or relish. Serve hot immediately.
