Cold lemon cake: the recipe for a citrus-fresh dessert

Cold lemon cake is a summer dessert without baking, fresh and elegant, a simpler and faster version of the classic soft lemon cake. It only needs a few hours of resting in the fridge and is reminiscent of a cheesecake for its tenderness and creamy consistency.
The crunchy base is made from mixed digestive biscuits, mixed with melted butter and seasoned with vanilla extract, then compacted into a uniform layer in a 20 centimetre diameter springform pan; the filling is made of lemon yoghurt, full-fat Greek yoghurt, whipped cream, lemon juice and grated lemon peel, icing sugar and gelatin for an enveloping final result.
Finally, the surface is garnished with a lemon jelly , prepared with water, sugar, lemon juice and isinglass, which gives it a light and pleasantly acidic aftertaste .
A refined dessert characterized by a crumbly shell in contrast to the soft filling and the citrus topping, ideal for anniversaries and special occasions , to end a dinner in the company of friends, but also excellent as a tasty snack : it will keep in the fridge, well covered, for about 2 days .
If you want, you can adapt the recipe and use the decoration you prefer: instead of the jelly, opt for a lemon jam or a fruit coulis that you will spread on the edges to create a dripping effect . If you want, you can replace the isinglass with completely natural agar-agar and add a pinch of turmeric instead of the yellow food coloring .
