CHEESY SCALLOPED POTATOES

Preheat Oven:
Preheat your oven to 375°F (190°C).

Prepare the Sauce:
In a medium-sized saucepan, melt butter over medium heat. Add the chopped onion and sauté until translucent. Stir in the flour until a paste forms. Gradually whisk in the milk and cook, constantly stirring, until the sauce thickens. Add 1 cup of cheddar cheese, Parmesan cheese, salt, pepper, and minced garlic. Stir until the cheese melts and the sauce is smooth.

Assemble:
In a greased baking dish, spread a small amount of the cheese sauce on the bottom. Layer half of the sliced potatoes on top. Pour half of the remaining cheese sauce over the potatoes. Add the remaining potatoes and then pour the rest of the cheese sauce over the top. Sprinkle with the remaining 1/2 cup of cheddar cheese and paprika.

Bake:
Cover the baking dish with aluminum foil and bake in the preheated oven for about 45 minutes. Remove the foil and continue baking for an additional 15-20 minutes, or until the potatoes are tender and the top is golden brown.

Serve:
Allow the dish to sit for a few minutes before serving to let the sauce set a bit.
