Carrot cake with mascarpone and marzipan decoration for Easter

Ingredients

Ingredients for the dough:
500 g carrots
440 g flour type 405
5 g baking powder
5 g tsp baking soda

1 tsp ground cinnamon
1 pinch of grated nutmeg
200 g sugar
4 eggs size M

grated peel of 1 organic orange
1 pinch of salt
300 ml oil e.g. rapeseed oil
40 g chopped walnuts

For the mascarpone cream filling:
3 sheets of gelatine
250 g cream
50 ml almond syrup
500g mascarpone​
50 g sugar

For decoration:
12 pieces of marzipan carrots
20 g ground walnuts

Instructions

Preheat the oven to 175°C top/bottom heat and line a 20x 30cm baking tray with baking paper.
