Carbonara lasagne: the recipe for a delicious and original first course

Carbonara lasagne is an original and rich first course, a reinterpretation of the classic , typically Roman recipe. The fresh pasta sheets are filled with a sauce made from crispy bacon, provola and pecorino, to which an enveloping béchamel sauce enriched with egg yolk is added. Delicious and irresistible, they are ideal for Sunday lunch with the family or a convivial dinner with friends.
The preparation is very simple and requires few precautions: it is important that the béchamel, made according to the traditional method and then mixed with the egg yolk , maintains a rather liquid consistency so that the pasta does not dry out during cooking; all you have to do is quickly brown the bacon in a pan, then place everything in layers in a large baking dish and sprinkle the surface generously with grated pecorino.
Passing through the oven we get a dish with a crispy crust and a melting filling that is difficult to resist: it can be enjoyed immediately piping hot or kept in the fridge and consumed the next day; in addition, it can also be frozen and thawed when necessary, perhaps for an evening organized at short notice.
For convenience we have used ready-made fresh sheets, smooth or rough according to taste, but if you have time you can also prepare the egg pasta at home. Instead of provola you can also use smoked scamorza or mozzarella, as long as it is allowed to drain from the whey for at least an hour.
If you don’t like the taste of pecorino, you can add half the amount of parmesan or replace it entirely with it. For the bacon, choose a quality bacon with a uniform consistency and aromatic scent: the fat released during browning can be used to give the lasagne even more flavor.
