Caramel Semolina Cake (Best Recipe)

Caramel semolina cake (best recipe) grandmother’s style with prunes and pistachio for more indulgence. This is the cake of my childhood, my mother often prepared it at home but with raisins , we loved to eat it at snack time with her famous chocolate porridge yum!

INGREDIENTS

1 liter of whole or semi-skimmed milk
140 g fine semolina
90 g caster sugar + 120 g for the caramel
3 whole eggs

40 g of unsalted or semi-salted butter
20 g orange blossom water
1 tablespoon thick crème fraîche optional
1 vanilla pod or 1 teaspoon vanilla extract

1 good pinch of salt
180 g pitted Agen prunes
40 g crushed pistachios optional

INSTRUCTIONS

In a bowl, place the prunes and cover with cold water then add half of the orange blossom water. Leave to soak overnight (or 3 hours).
