CARAMEL APPLE CHEESECAKE BARS

These cheesecake bars feature layers of graham cracker crust, creamy cheesecake, cinnamon apples, and a crunchy streusel topping. And don’t forget the caramel drizzle!

INGREDIENTS

FOR THE CRUST:
3 cups graham cracker crumbs (about 2 sleeves of cookies)
1/2 cup (113g) unsalted butter, melted
1/4 cup (30g) all-purpose flour
1/4 cup (50g) firmly packed light brown sugar

FOR THE CINNAMON APPLES:
2 cups chopped Granny Smith apples (about 2 or 3 apples)
2 tablespoons granulated sugar
3/4 teaspoon ground cinnamon

FOR THE STREUSEL TOPPING:
1 cup (200g) firmly packed light brown sugar
3/4 cup (60g) quick-cooking oats
3/4 cup (90g) all-purpose flour
3/4 cup (170g) unsalted butter, softened
1 teaspoon ground cinnamon
1/2 teaspoon salt

FOR THE CHEESECAKE FILLING:
24 ounces (680g) cream cheese, at room temperature
3/4 cup (150g) granulated sugar
3 large eggs
1 teaspoon vanilla extract

FOR SERVING:
Caramel sauce
