Cannoli Cake

This Cannoli Cake Recipe has a delicious, homemade vanilla cake filled with a cannoli frosting that has mascarpone, ricotta cheese, cinnamon, vanilla, and all of the amazing flavors of a cannoli.

Ingredients

Cake
2 ½ cups all-purpose flour
1 teaspoon salt
3 teaspoons baking powder
¾ cup butter room temperature

¼ cup vegetable oil
2 cups granulated sugar
2 teaspoons vanilla extract
4 large eggs
1 ¾ cup buttermilk
6 tablespoons mini chocolate chips divided

Frosting
24 ounces mascarpone cheese room temperature
15 ounces whole milk ricotta drained
5 cups powdered sugar
¾ teaspoon ground cinnamon
1 tablespoon vanilla extract
⅓ cup mini chocolate chips

Ganache
½ cup semi-sweet chocolate chips
¼ cup heavy whipping cream
Cannoli shells

Instructions

Cake
Preheat the oven to 350 degrees F. Spray two 8 inch cake pans with nonstick baking spray. Set aside.
