Caleni gloves: the recipe for typical fried carnival sweets from Campania

The Caleni gloves are typical Campanian fried sweets from Zuni, a frazione of the municipality of Calvi Risorta, a town in the province of Caserta. These are delicious, soft and light donuts, flavored with anise liqueur, lemon peel and juice, usually prepared for Carnival and for special occasions , such as patron saint’s feasts, baptisms, communions and weddings.
It seems that this gastronomic specialty was invented by a Zuni woman for a local baron around the 18th century.
Over the years the recipe has been passed down from generation to generation by a group of women in the region who preserve the ancient tradition and even today make it only by order with the help of the glove , a kind of large notched wheel .
The preparation is very simple: after mixing the liquid ingredients, gradually add the flour until you get a soft and non-sticky dough, which you let rest for 30 minutes.
The dough is rolled out with a rolling pin and from the wavy edges many strips are cut, folded on themselves and closed to form a ring; all you have to do is dip the Caleni gloves in the seed oil heated to about 170 °C until they are golden brown, crispy on the outside and soft on the inside.
For best results, we recommend frying one cake at a time, turning it frequently with a wooden or steel toothpick. The end result is a real delicacy that can be dusted with a barely noticeable layer of icing sugar and served as a snack to the delight of adults and children. or to bring to the table as a dessert at the end of a meal for a dinner with friends, accompanied by a glass of passito or other fortified wine.
