Berry Happiness Cheesecake

Make the crust by mixing together the crushed graham crackers, melted butter and sugar. Press into the bottom of a cheesecake pan.

In a bowl, mix cream cheese, powdered sugar and vanilla extract until smooth. Spread over the crust.

Heat the raspberries, sugar and lemon juice in a saucepan until the sugar has dissolved. Remove from the heat and allow to cool. Fold in the whipped cream and spread over the cream cheese layer.

For the blackberry glaze, stir together the blackberries, sugar and cornstarch mixture. Cook until thickened, then allow to cool slightly. Pour over the raspberry mousse layer.

Let the cheesecake rest in the refrigerator for at least 4 hours or until firm.

Garnish with fresh berries, chopped pistachios and mint leaves before serving. Preparation time: 30 minutes

Cooling time: 4 hours
Total time: 4 hours 45 minutes
Yield: 8-10 servings
