Berliner mit Marmeladenfüllung Rezept

INGREDIENTS

Ingredients for the yeast dough:
500 g flour
125 mg milk
100 g butter or margarine
30 g sugar
1 pk dry baking yeast
1 pk vanilla sugar
1 tsp salt
2 pcs eggs
1 pc egg yolk

Ingredients for the filling:

300 g jam, any

INSTRUCTIONS

Dough preparation: Start by heating the milk in a saucepan and dissolve the butter in it without letting the milk get too hot.
Mix the dough: Sift the flour into a large mixing bowl and mix it with the dry baking yeast. Add the lukewarm milk and butter mixture and add the sugar, vanilla sugar, salt, eggs and the egg yolk. First mix with a hand mixer on a low setting, then process on a higher setting to form a smooth dough.

Let it rest: Cover the dough and let it rise in a warm place for about 30-40 minutes until it has visibly risen.
Heat the oil: While the dough is resting, heat the oil in a deep fryer or deep pot to about 175°C. The right temperature is reached when small bubbles form around a submerged wooden spoon handle.

Portion and shape the dough: Place the risen dough on a lightly floured work surface, knead briefly and divide into 14-16 portions. Form each portion into a smooth ball.
