Baked meatballs: the recipe for the light and delicious version

Baked meatballs are the lighter but equally tasty version of the classic fried meatballs. They are prepared according to the traditional recipe with minced meat, an egg, stale breadcrumbs, parsley and parmesan and then cooked in the oven, drizzled with broth, oil and white wine.
The result is morsels with a soft texture that melt with the bite, immediately recalling grandmother’s cooking and family atmosphere. They are perfect to be served piping hot as a second course for Sunday lunch .
The preparation is very simple: just take the mixed minced meat , the finely chopped parsley and garlic, a pinch of salt, pepper and nutmeg for an aromatic touch, the egg, the grated cheese and the bread previously soaked in a drop of milk and gently squeezed.
Once you have obtained a homogeneous mixture, form many medium-sized balls and place them on a baking tray, season with rosemary sprigs and add the vegetable stock, the extra virgin olive oil and the dry white wine.
All you have to do is cook them at 180 °C for 25 minutes, moving the drippings from time to time so that they are always moistened by the cooking juices: they will remain juicy in the core and have an irresistible golden crust form on the outside.
You can enjoy them plain, accompanied by your favorite seasonal side dish , or dip them in a fragrant tomato sauce and serve with slices of homemade bread, for the inevitable finale.
To obtain an impeccable result, do not choose beef and pork that are too lean: in fact, the fat gives the meatballs an irresistible taste and tenderness. If you want, use only beef or, for a lighter dish, add some chicken or turkey; to make them even richer, however, you can add finely chopped cooked ham or mortadella or fill them with a cube of smoked provola or mozzarella drained of the whey.
