INGREDIENTS

For the dough:
500 g flour type 000
200 g butter at room temperature with min. fat. 82%
60g lard or other option 85g high fat butter
80 g powdered sugar
2 egg yolks
100 ml of milk
20 g fresh yeast or 7 g dry yeast
A pinch of salt
Grated peel from a lemon
Vanilla or a teaspoon of vanilla extract

 

For the filling:
400 g ground walnut
300 g of sugar
300 ml of milk
A pinch of salt
Vanilla or a teaspoon of vanilla extract
Grated peel from a lemon
3 egg whites
For grease:
1 yolk
1-2 tablespoons of milk
