Bacon Wrapped Potatoes: An Original and Tasty Meal

Start by preheating your oven to 180°C.
Wash the potatoes well and cut them into quarters. Place these quarters in a bowl, add salt, then pour boiling water over them to cover them completely.

Cover the bowl with a lid or cling film and let the potatoes rest for 30 minutes. This will pre-cook the potatoes slightly and ensure even cooking in the oven.
In another bowl, mix the grated Parmesan with the breadcrumbs and black pepper to taste.

Once the potatoes have rested, drain them and discard the water. Drizzle the potato wedges with a little olive oil, making sure they are well coated.

Then take each potato wedge, roll it in the parmesan and breadcrumb mixture, then wrap a slice of bacon around it.
Place the coated potatoes in a baking dish.

Bake for 40 minutes or until bacon is crispy and potatoes are golden brown.
Serve hot. These bacon-wrapped potatoes make a great accompaniment to your main dishes or can be enjoyed on their own.
