Apricot Quark Streusel Cake

Quark cream:
Put butter and sugar in the mixing bowl, beat on speed 3.5 for 3 minutes and gradually add the eggs through the opening in the lid.
Add the quark, salt, lemon juice and zest and the pudding powder and fold in for 15 seconds/speed 3.5.
Cut the apricots into cubes

Roll out the dough on a baking sheet and a stone with a rim and prick it. Pre-bake for about 10 minutes. Spread the quark cream on top and bake for another 30 minutes.
Place the apricots on top and sprinkle with the sprinkles and bake everything together for another 25 minutes until crispy.
