Apple strudel cake: the recipe for the soft and delicious dessert with pine nuts and raisins

Step 1
Place eggs and granulated sugar in a large bowl1and beat with an electric whisk until light and fluffy.

Add the seed oil2and continue with the assembly.

Also add the ricotta, well drained of whey3.

Mix the sifted flour with the yeast4, gradually adding milk at room temperature.

Add the raisins previously soaked in rum and well squeezed and the pine nuts5: keep some aside for finishing.

Peel and core the apples and cut them into small pieces; then add them to the prepared mixture and mix thoroughly with a spatula6.

Spread the dough in a well-buttered and floured 22 cm diameter cake tin and sprinkle the surface with the remaining pine nuts7.
Step 8
Finish with a pinch of brown sugar and a pinch of ground cinnamon8and place in a static oven at 175 °C for about 40 minutes.
Step 9
Once the cooking time is up, remove the apple strudel from the oven and allow to cool; turn it out onto a serving plate, cut into slices and serve.
