The apple heart tart is a dessert with a crumbly shell and a soft interior. The shortcrust pastry shell is made from a dough that uses yeast and a drop of milk to obtain a soft and voluminous result.
The tender heart , on the other hand, is made from apple sauce cooked with a dash of apricot jam, brown sugar, cinnamon and lemon juice and thickened with a little starch.
The result is a very fragrant and comforting dessert, a real autumn delight that is perfect to serve at the end of a meal or with afternoon tea . You can also serve it with a layer of custard or a scoop of ice cream for an irresistible hot-cold contrast.
For the filling we used small Gala apples , red, sweet, juicy and delicious. But you can also replace them with Stark models or with the classic Renette models.
Do not cut the apple heart tart until it has completely cooled so that the cream has time to set and thicken. If you want, you can also season the filling with other spices such as vanilla, cardamom, nutmeg or citrus peel, or enrich it with chocolate chips or coarsely chopped dried fruit.
