Cheesecake with bounty coconut

Coconut bounty cheesecake is inspired by the famous candy bar. The cheesecake is very coconut-y with a delicious Oreo base and homemade chocolate icing. A delicious dessert with coconut milk, which is light and delicate in taste and does not require baking.

You can make bounty coconut cheesecake with ready-made canned coconut milk or use a homemade version. You will find a link to the recipe in the ingredients list. Coconut milk does not contain lactose and, above all, has a wonderful coconut aroma.

Cottage cheese combined with coconut milk gives a wonderfully light consistency and after one piece we don’t feel very full.

The cheesecake is not very sweet, but if you prefer sweeter desserts, you need to sweeten it more, e.g. by adding more white chocolate. Powdered sugar in the recipe can be replaced with, for example, xylitol.

Delicious, light, coconut and easy to prepare. Coconut cheesecake does not require baking. Be sure to try it because it’s one of my favorite desserts.

BOUNTY COCONUT CHEESECAKE

INGREDIENTS FOR THE BASE:

150 g Oreo cookies
40 g butter

INGREDIENTS FOR COCONUT MASS:

500 ml coconut milk from THIS recipe or from a can
300 g coconut flakes
100 g of white chocolate
500 g of cottage cheese, triple ground

approx. 6-7 tablespoons of powdered sugar
1 teaspoon of vanilla extract
2 tablespoons Malibu liqueur (optional)
2 1/2 tablespoons of gelatin
1/2 cup of hot water

INGREDIENTS FOR THE TOPPING:

2 tablespoons of cocoa
3 tablespoons of powdered sugar
50 g butter
2 tablespoons of sour cream 18%
1 teaspoon of gelatin
1 tablespoon of cold water
