Brighten your day with a slice of our lemon strawberry cheesecake. The perfect mix of tart and sweet for a refreshing dessert!

Ingredients :

For the crust:
1 1/2 cups graham cracker crumbs
1/3 cup sugar
6 tablespoons unsalted butter, melted

For the lemon cream cheese layer:
2 (8 ounce) packages cream cheese, softened
3/4 cup granulated sugar
2 tablespoons lemon zest
1/4 cup lemon juice
2 eggs
1 teaspoon vanilla extract

For the strawberry preserve layer:
1 cup strawberry jam

For the strawberry glaze:
1/2 cup strawberry jam
2 tablespoons water
For the topping:
1 cup fresh strawberries, sliced
​​Whipped cream
Curls of lemon zest

Preparation :

Preheat the oven to 350°F (175°C). Mix together graham cracker crumbs, sugar and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 10 minutes.

Mix together the cream cheese, sugar, lemon zest and lemon juice until the mixture is smooth and free of lumps.

Continue the process by adding the eggs one at a time, mixing well after each addition to ensure an even consistency.

Add the vanilla extract and mix until well combined.
