Ingredients:
For the chicken
2 chicken breasts, butterflied into 2 slithers
100g panko breadcrumbs
150g plain flour
Salt and pepper
Egg, or if you don’t have egg, melted butter
Vegetable oil (enough to fill a few inches in a pan)
For the sauce
1 onion
1 clove garlic
50g ginger, or thumb sized piece
2 tbsp mild curry powder
1 tsp turmeric
1 tbsp plain flour
300ml chicken or vegetable stock
2 tbsp oil
100ml coconut milk
1 tsp light soy sauce
1 tsp sugar
