Light and fluffy pancakes, made with simple ingredients like flour, buttermilk and eggs. These amazing delights are round in shape and can be made with fresh fruit or plain.
Ingredients
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 cups buttermilk
3 large eggs, separated
unsalted butter
powdered sugar for sprinkling
Instructions
In a medium bowl, whisk together the flour, salt and baking soda.
Stir in the buttermilk and egg yolks.
In a medium mixing bowl, add the egg whites.
Beat on medium high until soft peaks. Fold into the batter.
Heat pan with a little butter, vegetable oil or cooking spray in each well. (I like to use butter, it adds a great brown butter flavor).
