This smooth and creamy No Bake Peppermint Cheesecake is a festive make-ahead dessert for the holidays! It has a crumbly wafer crust, a minty filling with crushed peppermint and a light whipped cream on top.
Ingredients
For the Crust
2 1/4 cups (302g) vanilla wafer crumbs
2 tbsp (26g) sugar
Pinch of salt
10 tbsp (140g) unsalted butter, melted
For the Filling
24 oz (678g) cream cheese, room temperature
1/2 cup (104g) sugar
6 oz white chocolate, melted and slightly cooled
2 1/4 tsp peppermint extract
1 tsp vanilla extract
1 1/4 cups (300ml) heavy whipping cream, cold
3/4 cup (86g) powdered sugar
1/4 cup crushed peppermint candies
For the Whipped Cream
1 cup (ml) heavy whipping cream, cold
1/2 cup (58g) powdered sugar
1/2 tsp vanilla extract
1/2 tsp peppermint extract
Red gel icing color
Crushed peppermint candies
