1 tsp. pure almond extract (if you don’t have one, use vanilla extract)

1 Tbsp. (10 g) rice flour
THE DOUGH
2 tsp. psyllium husk powder or 2 Tbsp. whole psyllium husk)
3/4 cup water at room temperature
1 cup + 7 tablespoons (172 g) tapioca flour
1 cup (120 g) millet flour
2 Tbsp. (20 g) rice flour
2 Tbsp. sugar
2 tsp. rapid rise active dry yeast
1 1/2 tsp. baking powder
2 tsp. xanthan gum
1 tsp. sea salt
1/3 cup + 2 Tbsp. warm milk (about 120 F)

1.FOR THE ALMOND FILLING, mix all the ingredients in a bowl and refrigerate until ready to use

2.FOR THE DOUGH, whisk psyllium husk powder with water in a medium bowl and set aside. It will form a gel-like mixture
