Ingredients:
- 90g of sugar
- 80 ml of vegetable oil
- 1 egg + 1 egg yolk
- About 250g of flour
- 1 teaspoon baking powder (5-6g)
- Lemon (or orange) zest to taste
- 1g of vanillin or 1 teaspoon of vanilla sugar
- A pinch of salt
Instructions:
- Preheat the oven to 180°C.
- In a bowl, mix the egg, egg yolk, sugar, vanilla and salt.
- Add vegetable oil and mix well.
- Stir in the lemon zest, then add 2 tablespoons of flour and the baking powder. Mix until you obtain a homogeneous mixture.
- Add the rest of the flour gradually kneading until the dough is soft.
- Roll out the dough and divide into 4 equal parts. Make stripes with each part.
Assemble the strips to form a roll, then cut it into small cubes.
Place the dough cubes on a baking tray lined with baking paper.
Bake the biscuits for about 15 minutes, until they are golden.
