  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 1/2 cup sliced dates
  • 2 eggs at room temperature
  • 1/4 cup water + to taste (about 60 ml)
  • 3 teaspoons stevia sweetener (or alternatively 3 tablespoons of erythritol)
  • 1 teaspoon vanilla extract (cinnamon is fine too)
  • A drizzle of extra virgin olive oil (for the mold)
  • A little goji berries or dried cranberries

Preparation Steps

Let’s break down the preparation process into simple steps:

Mixing the Batter
  • Start by placing the blended oat flakes in a bowl and adding the yeast.
  • In a separate container, beat the eggs with salt, vanilla extract, and sweetener until dissolved.
  • Peel, core, and cube the apples, then blend them with water to obtain a smooth puree.
  • Combine the apple puree with the eggs and mix well.
  • Pour this mixture over the oat flakes and add the sliced dates, stirring until you achieve a firm yet soft consistency.
Toasting the Nuts
  • Place the almonds in a saucepan with a little water, boil for 2-3 minutes, then drain and cool.
  • Peel and toast the almonds over medium heat for 2-3 minutes until lightly browned.
  • Toast the walnuts in a non-stick pan for 2-3 minutes, then chop them coarsely along with the almonds.
Baking the Cake
  • Distribute the chopped nuts evenly into the cake batter.
  • Grease an 18cm zippered mold with olive oil and line it with parchment paper.
  • Pour the batter into the mold and garnish the surface with goji berries or dried cranberries.
  • Lightly crush the berries with a spatula and bake in a preheated oven at 180°C for 40 minutes.
