How to prepare soft nougat:
Step 1
To prepare the soft nougat, start with the almonds, which must be roasted in a preheated oven at 120 °C for 25 minutes or until golden brown. If you want to reduce the time, you can increase the temperature to 180 °C and roast the almonds for only 5 minutes, being careful not to let them darken too much.
Step 2
Separately, whisk the egg whites and 30 g sugar until stiff peaks form. and set aside.
Step 3
Then prepare the syrup: pour the remaining sugar into a heavy-bottomed saucepan, cover with water and cook over low heat, stirring frequently, until the syrup reaches a temperature of 145°C.
