Premix:
100 g flour “00”.
10g sugar
90 g milk at room temperature
15 g fresh brewer’s yeast

Dough:
150 g flour “00”.
250 g Manitoba
flour 40 g butter
240 g milk
90 g sugar
Lemon peel/vanilla

for the filling:
200g ricotta
300g whipped cream
30g icing sugar
