How to make peanut butter cereal cups
Making peanut butter granola cups at home couldn’t be easier. If you’re making homemade granola, start by combining the oats and sugar, then spread the mixture on a baking sheet. Drizzle the honey over the oats and stir again to coat well.
Spread the oats again and bake at 350°F for 30 minutes, shaking the sheet occasionally to ensure the granola bakes evenly. Let cool completely.
Once cooled, combine cereal, peanut butter, honey and maple syrup in a large bowl. Gently press cereal mixture into the wells of a muffin tin, making sure to reach the top of each well, then place the tin in the freezer for half an hour.
Melt 1 cup peanut butter in the microwave. Pour melted peanut butter into each cup, filling the cups about three-quarters full. Freeze the cups for one hour.
To make the ganache, melt the chocolate almond bark in the microwave, stirring occasionally. Mix the cream with the chocolate, then pour the chocolate over each cereal cup. Freeze the cups for two hours, then enjoy.
Tips for making the best peanut butter cereal cups
You can replace peanut butter with other types of nut butters. Almond butter, cashew butter and hazelnut butter would be delicious alternatives.
You can prepare the muesli a month in advance.
If you find that the cereal mixture is too sticky to work with, you can grease your hands with butter or neutral oil such as refined coconut oil or avocado oil.
