Pasta timbale is a tasty and rich first course , typical of the local gastronomic tradition. A dish for festive days, ideal to bring to the table for Sunday lunch or a special occasion, it can be prepared as puff pastry, savory dough or brisée, for an even more spectacular and impactful result.
In our version, the rigatoni is generously seasoned with a sauce of sausage , peas and mixed mushrooms, finished with diced provolone and grated parmesan, and then wrapped in a fragrant shell of homemade shortcrust pastry.
The result is a delicious and surprising dish that has a crispy crust when cut and a tasty, chewy filling, and is also great as an exquisite stand-alone dish for a dinner with special guests.
If you prefer, you can pour the rigatoni into a lightly buttered mold and use the dough only as a topping. To save time, you can also buy the ready-made one, easily available in the refrigerated counters of supermarkets, to roll it out and put it directly in the mold.
Depending on the region of origin and what you have in the fridge, the recipe can then be prepared in many different variations : even if the most common ones almost all involve a full-bodied filling of meat and vegetables.
Perhaps not everyone knows that the timbale takes its name from the homonymous hemispherical or slightly conical shape (with a height equal to the diameter, after the ancient percussion instrument that inspired its shape) in which it was cooked.
Nowadays, in reality, this name refers to any preparation based on pasta, rice or vegetables, seasoned in layers and cooked in containers of different shapes and sizes.
