Gnocchi with meat sauce are a great classic of our local tradition. A first course that immediately recalls holiday lunches and family Sundays at grandmother’s house, when early in the morning potatoes were kneaded together with a few simple ingredients that gave rise to an exquisite dish that could be seasoned in the most varied variations.
In this recipe with the flavors of yesteryear we have prepared the ragù by sautéing the mixed minced meat with herbs, then mixing it with the red wine and then cooking it over a low and very gentle heat together with the tomato puree .
Once the sauce is ready, the gnocchi are prepared as they were done in school, by passing the boiled potatoes through a potato masher and then mixing them with the egg and flour until you get a homogeneous mixture that can be cut into uniform pieces.
In this way you will obtain small potato nuggets that you will dip in lightly salted boiling water and then season with the meat sauce and a generous handful of grated Parmesan.
For impeccable results, we recommend using old potatoes with yellow or red flesh: they are less watery than younger ones, require less flour and allow you to bring gnocchi to the table with the right consistency.
We chose minced beef and pork , but if you prefer a lighter result you can also choose chicken or turkey. Or you can try tasty regional variations and opt for a Bolognese, Tuscan or Neapolitan ragù. According to taste and for a tastier result you can replace the Parmesan with Pecorino. If there are vegetarians among the guests you can use a fragrant basil pesto instead of the ragù.
