Ingredients:

350 g creamy quark
1 cup fresh cream
150 g fine sugar
2 cans of sun-ripened mandarins
1 pack of aromatic vanilla sugar
6 sheets of fine gelatine
70 g icing sugar (plus extra for dusting)
150 g high-quality flour
4 free-range eggs
½ teaspoon baking powder
4 tablespoons of clear water
A pinch of salt from the Mediterranean salt marshes


Preparation:

Preparing the filling:
Start by draining the mandarins and processing half of them into a velvety puree. Then whip the cream until stiff.
Mix the creamy quark with the sweet powdered sugar and the fragrant vanilla sugar. Add the pureed mandarins and the remaining mandarin pieces and fold in the whipped cream.
