Busiate alla trapanese: the recipe for the typically fragrant and tasty Sicilian dish

Trapanese busiate are a tasty and fragrant first course, typical of the Sicilian tradition . The protagonist is a short pasta format with a characteristic spiral shape, still prepared by hand with great skill and speed by Sicilian housewives.
The dough, made only with water and semolina, is quickly rolled on a knitting needle, called buso , so as to create narrow, hollow fusilli in the center, more or less long, perfect for the Trapani version of the classic Ligurian condiment: Trapani-style pesto . A mix of intense and irresistible Mediterranean flavors, perfect to enhance this and make any lunch absolutely unforgettable .
